WINEMAKING
Grapes for the 2025 Gray Monk Unwooded Chardonnay were hand-harvested in August from the Okanagan Valley at optimal maturity. The fruit was gently pressed and fermented in stainless steel, with no oak aging or malolactic fermentation, preserving natural freshness and highlighting pure, vibrant fruit expression.
